We urgently need a MATURE experienced person ( who also has knowledge of food and beverage control to build up our new Restaurant) for a Lodge Manager position. It could be a single person who will not mind living in the bush on his /her own. OR alternatively we would open the position for a couple where HE must have conservation and guiding qualifications to be our Reserve Manager and start introducing game and other new projects we would like to start in our Nature Reserve. Manager – Food, Beverage & Housekeeping. 5* lodge Mapungubwe area. The incumbent is to replace the owner’s wife (who wishes to retire) and will report to the lodge manager. The incumbent will be working with two other managers - an Administration Manager, who deals with all enquiries, bookings, admin, etc, and a Lodge and Farm Manager, who is in charge of the lodge, hosting guests and the game farm & estate. The lodge is small accommodating 16 guests in 8 twin-bedded chalets, fully catered, with a staff of 8. It is located on a 6000ha private game reserve next to Mapungubwe National Park & World Heritage Site, and is 65km from the nearest town, Musina. Most of the guests are international and most of them are from Germany. In addition, a 2 room bed & breakfast is being established at the farm house. The incumbent would be supplied with accommodation on the property within walking distance of the lodge. The semi-detached cottage has a bedroom with en-suite bathroom, and built in cupboards, open plan kitchen, dining and lounge area and a veranda. The incumbent will be supplied meals when he/she is on duty and when there are guests in the lodge. The incumbent must be happy to be located in the country, amidst a very small community, away from bright city lights. MANAGEMENT COUPLE FOR 5* LODGE NORTHERN KZN.
Lodge managers Salary package of R25 000 per month for the couple, which will include meals and accommodation. Medical aid, pension, etc will be the responsibility of the candidate and is not offered as part of the package. The salary for the appointment of a seperate manager and assistant manager, would be negotiable if we decide to go that route. - Report to the General Manager

Main Duties:
- Oversee all Heads of Departments 
- Oversee all other staff via the HOD’ s

- Implement the Vision of the lodge through staff training and mentorship, and identify staff with the potential for improvement

- Lodge Managers are expected to use initiative and be innovative. Ideas and initiatives must first be discussed with the General Manager and Trustees before being implemented to ensure suitability and effectiveness

Duties with regards to Departments
Every Department:
- Delegate supervision duties to HOD’s (as described for every department) and follow up on the performance of these duties.
- Ensure that all departments function within budget constraints without lowering quality and standards.  Limit all unnecessary wastage.
- Oversee all stock control in conjunction with the responsible persons.
- Compile a six-monthly performance appraisal on HOD’s and assist the HOD’s to do the same for their subordinates.
- Compile a monthly lodge report on all departments and present it at the monthly Management Meeting.  This report is handed to the General Manager by the 10th of each month who will attach it to the minutes of the meeting.

This reports is a compilation of the following aspects:
- Income and Expenditure Analysis
- Occupancy Analysis
- Activity Analysis
- Food Cost Analysis
- Monthly Bar Income, Cost, Profit and Commission Analysis
- Mpalane Occupancy Analysis
- Other aspects; such as maintenance, health & safety and training

Department Kitchen:
- Oversee menus, food quality and presentation, stock orders and controls, hygiene and staff training
- Quality control and service is of utmost importance

Department Activities:
- Oversee the smooth running of activities and vehicle maintenance via the Assistant/Activities Manager

Department Housekeeping:
- Oversee the smooth running of Housekeeping, stock orders & controls via the Head Housekeeper
- Oversee maintenance and cleanliness of furnishings, soft furnishings and linen
- Receive monthly stock figures from the Executive Housekeeper and incorporate it in the Monthly Report

- Oversee the maintenance of the gardens at the lodge, Mpalane and at staff accommodation

Department self-catering camp:

Staff - General:
- Oversee staff welfare.
- Co-ordinate and keep track of staff days off, sick leave and annual leave.  Keep track of absenteeism and reasons therefore
- Ensure staff members are aware of their duties and perform them to the required high standards and professionalism
- Oversee the issue and maintenance of staff uniforms.  Ensure staff members are always dressed in the correct uniform and are neat and clean when dealing with guests
- Allocate the tips received in a fair manner every 2 months
- Draw up a general staff training plan in conjunction with HOD's and co-ordinate and oversee the implementation of this plan. Regular in-house training by Management is of utmost importance to ensure maintenance of standards
- Maintain discipline: Dealing with problems & issues at hand. Liaise with General Manager should a Disciplinary Hearing be required
- Interviewing of applicants for vacant positions in conjunction with the General Manager and Trustees

Due to the fact that the Lodge Managers are a couple, responsibilities for certain departments have been allocated to each person according to their strengths and expertise, HOWEVER, these areas of responsibility are not mutually exclusive and both Lodge Managers are expected to supervise any area, when the need arises.

Assistant Manager
Authority:
- The Assistant Manager falls under the Management Couple.
When the Management Couple are on days off or take annual leave, the Assistant Manager assumes the responsibilities of the Management Couple and reports directly to the General Manager.

Main Duties:
-Supervision of areas delegated to him/her and reporting back to the Lodge Manager on the performance of departments falling under him/her.
-Any duty of the Lodge Manager can be delegated to the Assistant Manager, as well as any other duty as required.

Description:
Spa Therapist 5* lodge Limpopo Lowveld.  

Requirements: 
- Worked in the bush before 
- Very well qualified in aromatherapy, reflexology, swedish massage, indian head massage
- Single masseuse well presented (photo required) 
- A fun person who is confident and is great with people 
- Would also oversee the housekeeping department as a secondary role. This is essential to the role! 
- Will assist in hosting (normally once a week), and other areas should there be no massages. 

Package: 
- R 5000.00 pm gross + 25% commission on treatments 
- Accommodation: own room and bathroom
- Food: all in - Medical aid ; 50% with permanent contracts only. 
- Fixed term contract of 3 months to begin with. 
- 6 weeks work cycle followed by 2 weeks leave. 
- 2 additional weeks of annual leave in 2nd year only and forwards.

Additional points: 
- Those applicants that apply must be very aware of the lodge and understand that we are in a remote area and not close to pubs, cinemas, parties etc.
