What are the key responsibilities of the position? - To create, design and implement menus throughout the different - To take complete responsibility for the procurement of all goods – food related and materials necessary for the food production, on a daily basis for the three lodges, pastry kitchen and staff canteens. - To take complete responsibility for the hygiene, cleanliness and maintenance of the three kitchens - To review and analyze monthly accounts, highlight and account for problem areas and ensure appropriate action is taken to rectify these problems. - Maintain all food cost of all lodges and areas as per agreed budgets - Carry out regular, meaningful performance appraisals - Ensure that training is implemented, documented and maintained. - Involved with the kitchen staff recruitment process and to take responsibility for their training, development, annual reviewing, forward Rostering and leave scheduling. - Creation of new dishes to replace menu dish when required. - Create several options of Unique Dining Experiences in terms of combining Safari and Lodge into a memorable occasion
What type of experience do we require? - Minimum 2 Years experience as a Head Chef in an Up Market Kitchen - Minimum 5 Years experience in a 5 star environment - Game lodge experience is a plus
Which qualifications will secure this position? - Professional Chef qualification from a recognized culinary school - Drivers License
