A qualified Food & Beverage Manager with Executive Chef background and experience in kitchen management and high quality food preparation and presentation. Must do in house training and menu design, stores and stock controls, hygiene, dietary requirements as well as set ups for bush meals and sundowners. Must be mature, stable, responsible and loyal. Must be willing to relocate to Northern Botswana, enjoy the bush life, be capable of working in remote area for lengthy periods and be dedicated and passionate about the bush life.
The person is responsible for overall operations of the kitchen as well as beverages to ensure compliance with departmental, company, health, safety and regulatory standards and procedures. This role is responsible for all aspects of managing the kitchen and personnel for departments under your charge, ensuring the quality preparation of all menu items, and proper handling / storage of all food items in accordance with standards. Coordinates the purchase of all food and drinks , develops menus, maintaining approved food costs and labour costs.
RESPONSIBILTIES:
All rounder in hot and cold kitchen.
Development and planning of menus, costing and delivery of excellent customer service.
Excellent management, cost control, menu planning and meal preparation.
Ability in work in all stations of the kitchen, as well as work with all products and food ingredients.
Operate and maintain all equipment required for the job.
Ability to anticipate guests' needs, respond promptly and pay attention to detail.
Training capabilities and excellent communication skills are a necessity.
Qualifications:
Relevant tertiary education - senior school certificate.
Relevant tertiary education in hotel management or equivalent.
Culinary qualifications plus a minimum of plus 5 years hands on experience in an upmarket fine dining establishment.
